HYDERANAD BIRYANI

 
Hyderabad Biryani
 

Ingredients:


Basmati Rice - 5 cups
Ghee - 1 cup
Cumin seeds - 1 tbsp
Cloves - 5 nos
Cinnamon - 3 small pieces
Cardamom - 4 nos
Bay leaves - small qty
Green Chillies - 10 nos (chopped)
Onions - 5 nos
Ginger Paste - 1 tbsp
Garlic paste - 1 tbsp
Potatoes - 2 nos
Carrots - 2 nos
Green Peas - 1/2 cup
Mint (Pudina leaves) - 1/2 cup
Turmeric Powder - 1/2 tsp
Curd - 1 cup
Salt to taste
Water - 10 cups
Rose Water - 4 tsp
Cashewnuts - 10 nos
Almonds - 10 nos
Raisins - 5 nos
Saffron - 1 tsp
Coriander Leaves - 1 tbsp (chopped)


 

METHOD


  • Wash and soak the Basmati rice for 10 mins.
  • Heat ghee in a cooker, cumin, cloves, cinnamon, cardamom, bay leaves, chopped green chillies, and finally add onions.
  • Fry it till onions turn to golden brown color.
  • Now add the ginger garlic paste to that.
  • Then add vegetables to it and cook for some time.
  • Now add turmeric powder, mint leaves, curd and fry for a minute.
  • Add water and salt to it.
  • Now put the rice and semi cook it in the cooker and the close it and cook it.
  • Mix rose water to that cooked rice.
  • Heat 1 tsp of ghee in a pan and roast nuts and garnish it with the nuts and coriander leaves and saffron.
  • Serve hot with Onion curd raita.
