BRINJAL RICE

 
 
 
Brinjal Rice

Ingredients:


Cooked rice - 3 cups
Oil - 3 tsp
Mustard seeds - 1 1/2 tsp
Curry leaves - few
Eggplant (brinjals) - 5 nos
Salt to taste
Green chillies - 3 nos finely sliced
Turmeric powder - 1 tsp
Tomato - 3 nos (finely chopped)
Sambar Powder - 4 tsp
 
 

METHOD


  • Boil rice and keep aside.
  • In a pan fry the mustard seeds, curry leaves in oil, add the brinjal, salt, turmeric powder and green chillies.
  • Stir on low flame, cover and cook for 10 minutes.
  • Now put Tomatoes and Sambar powder to that and fry till it cooks well.
  • Remove from fire, mix with the rice and serve hot.
