Ingredients:
Eggs - 4 (hard boiled)
Onion – 1 nos
Ginger – 1/2 inches
Garlic – 4 nos
Green chilies – 2 nos
Oil - 5 tbsp
Tomato – 1 nicely chopped
Red chili powder – 2 tbsp
Coriander powder - 1/2 tsp
Turmeric powder – 1/2 tsp
Garam masala - 3/4 tsp
Salt To Taste
Coriander leaves - 2 tbsp chopped |

METHOD
- Remove the shell of boiled eggs & keep aside.
- Grind onion, garlic, ginger and green chilies to fine paste.
- Heat oil in a pan and add onion-garlic paste and fry till golden brown.
- Now add tomato and Red chilli powder, coriander powder, turmeric powder and garam masala fry for a minute and add. Fry till it starts leaving oil.
- Add a cup of water and cook till it dry's.
- Now add the boiled eggs.
- Add 1 cup of water and bring to boil and reduce the flame.
- Simmer for 10 minutes.
- Garnish egg curry with coriander leaves.
- Serve hot with parota, chapathi or rice.
