STUFFED BRINJAL

 
 
 
Stuffed Brinjal

Ingredients:


Brinjals - 5 nos (Medium sized)
Green chillies - 6 nos
Coriander small qty
Tamarind paste - 1/4 tbsp
Oil - 50 ml
Salt to taste
 
 

METHOD


  • Make a paste of tamarind paste, green chillies, salt and coriander leaves.
  • Cut Brinjals into 4 pieces vertically as they hold together at one end.
  • Stuff sufficient green chilly and coriander paste into the brinjals.
  • Heat oil in a thick bottom pan and fry the brinjals.
  • Stir the brinjals till they are fried on all sides.
  • Serve it with white rice.
