    Sakkarai Pongal / Sarkarai Pongal

    Ingredients
    » 2 litres Milk
    » 1 1/2 cups Newly harvested Rice
    » 1/4 cup Moong Dal
    » 15 no. Cashewnuts
    » 10 no. Almonds
    » 30 no. Kishmis
    » 1/4 level teaspoon Nutrieg Powder
    » 1 1/2 cup Jaggery (grated)
    » 1/4 teaspoon Saffron (crushed)
    » 1 teaspoon Cardamom powder
    » 2 tablespoons ghee

    Method
    1. Chop almonds and cashewnuts.
    2. Clean kishmis.
    3. Pour milk in the earthen pot called 'Pongapani' and place it on fire.
    4. When the milk starts boiling add rice and dal, after washing. As soon as the rice and dal are cooked to softness, add jaggery and ghee.
    5. Let cook on medium fire for some time and then put in almond and cashewnut bits, saffron, nutrieg and cardamom powders.
    6. Now, add the kishmis.
    7. Bring to one or two good boils.

    Pongal Songs

    The Pongal songs of Tamil land have in them a remarkable charm just as one can find in the songs of any other country. But what is special in these Pongal songs is, they not only possess a native charm and the aroma of the soil but have preserved in them a certain literary and artistic quality which is at once striking and characteristic. This is so because the people who speak the language of these folk songs, the Tamils, have had a great historical past and a wonderful literary tradition.

    These Pongal songs deal with such universal themes as Love and War, Wealth and Poverty and they also deal with religious themes and mythological episodes. They centre round famous chieftains, leaders and legends associated with the festival of Pongal. Each village in South India has these songs in hundreds and each temple has its own traditional songs. There are several Pongal songs peculiar to the area and these songs reflect the individuality of the region and its traditions in worship. Pongal is also associated with the dance and drama that play a very important part and so naturally these songs form the major bulk of this valuable treasure.

    Pongkal is overflow in abundance or with heat

    Ageless Tamil
    Long before metamorphosis of rocks

    Pongal Celebration Around the World

    The harvest festival of Pongal is celebrated with enthusiasm by the Indians be it in India or any other country. Tamils living abroad follow their cultural values throughout their significant festival. It is great to note that even the younger generation of Tamils living abroad come forward to contribute to the development of this harvest festival. Through various contributions in celebrating Pongal, the Tamil diaspora maintains and nurtures the cultural distinctiveness.

    Pongal for Tamils Abroad
    Today, Pongal has become a vibrant festival with a global presence. The dispersal of Tamils around the globe is not of recent origin and at the moment there are seventy million of them spread in over fifty countries of the world. Pongal festivities means a lot for the people residing in countries other than India. The festival gives them a chance to come out with vibrant colors to perform rituals and religious ceremonies. It gives a feel of motherland and its culture. A togetherness is tried to be rooted in the Tamil diaspora by celebrating the Pongal festival at a single place, where everyone performs the Pongal rituals and share their sweet memories of India.

    Tamil Diaspora
    The early settlement patterns of the Tamils could be traced to the sugar cane plantations of Mauritius, Reunion in the Indian Ocean; Jamaica, Trinidad and Tobago in the Caribbean; Guyana and Suriname in South America; plantations in South Africa; Malaysia; Ceylon (Sri Lanka); and to coal mines of New Caledonia off Australia. In Indonesia and Thailand.     Traditions & Customs
    Inspite of immense urbanization, the traditions and customs attached to the harvest festival of Pongal has not diminished. Though the nature of these tradition and customs has changed, the glitter of this festival has not dimmed. The fast changing times notwithstanding, certain things do not change. The way we celebrate the festivals, for instance. The festival of Pongal captures the quintessence of south Indian culture in all its entirety and traditional practices and customs continue to hold their own even today.

    The spirit is alive and Pongal is still treated as a time to discard the old and welcome the new. The new crop that is harvested is cooked and offered to the Almighty. Celebrated for four days, the various traditions and customs of this harvest festival are:

    Bhogi Pongal
    The first day of Pongal known as 'Bhogi Pongal' is a day for family gathering and is dedicated to Lord Indra, the king of the deities and God of the Clouds and Rains. Offerings are made to him to please him so that he blesses us for the plentiful harvest. It is also the beginning of the New Year according to the Malayalam calendar and before sunrise, a huge bonfire of useless things in home is lit that is kept burning throughout the night. All the time, boys beat little buffalo-hide drums known as 'Bhogi Kottus'. The houses are then cleaned till they shine and are decorated with Kolams painted using rice four. There are yellow pumpkin flowers are set in cow-dung balls in the middle of these designs.

    Surya Pongal
    The second day of Pongal known as 'Surya Pongal' is dedicated to the Sun God. The granaries are kept full on this day and Sun God with his rays are painted on a plank as he is worshiped with the birth of the new auspicious month of Thai. Since the word 'Ponga' means 'to boil' representing plentiful and excess yield, a special dish is cooked on this day in a new mud-pot that comes in innovative shapes and have artistic designs on them called 'Pongapani'. The special dish is called 'Sarkkarai Pongal' and is offered to Sun God with sugarcane sticks. It is said that Lord Sundareshwar performed a miracle on this day in the Madurai temple and breathed life into a stone elephant who ate sugarcanes. One can see the depiction of the event in the Meenakshi temple.

    Mattu Pongal
    The third day known as 'Mattu Pongal' is dedicated to the cattle as cowherds and shepherds pay thanks to their cows and bulls, paint their horns and cover them with shining metal caps. They are fed 'Pongal' and tinkling bells are tied around their neck. Cattle races are conducted and in the game called 'Manji Virattu' groups of young men chase running bulls. Bull fights called 'Jallikattu' are also arranged at some places where young men have to take the money bags tied to the horns of ferocious bulls single-handedly and without the use of arms. Lord Ganesha and Goddess Parvati are also worshiped on this day. At some other places, this day is celebrated as Kanu Pongal when girls feed colored balls of cooked rice to the birds and crows and pray for their brothers' happiness and that they always remember them.

    Kaanum Pongal
    The fourth day is termed as Kaanum Pongal. On this day, people travel to see other family members. On this day, the younger members of the family pay homage to the elders, and the elders thank them by giving token money. Another thing many do is leave food out on banana leaves for birds to take. Many South Indian people will take the first bit of rice cooked in any given day and set it outside for the crows to take, so this is not necessarily a habit only for Pongal.

    Meaning & Significance

    People celebrating Pongal should be aware of the meaning & significance of the important rituals associated with this harvest festival. Pongal or Thai Pongal is also called Makara Sankaranthi, since it is celebrated on the first day of Thai when the Sun enters the Makara Rasi (Capricornus). This signals the end of winter and the onset of spring throughout the northern hemisphere. For the next six months, the days are longer and warmer.

    The period is referred to as Uttarayan Punyakalam and is considered auspicious. Legend has it that the Devas wake up after a six-month long slumber during this period. And so it is believed that those pass away during Uttarayana attain salvation. In fact, Bheeshma is believed to have waited for the dawn of Uttarayana before he gave up his life.

    Pongal is a four-day affair. The first day, Bhogi, is celebrated on the last day of the month of Margazhi. On this day, people decorate their homes. New vessels are bought and old and unwanted things burnt. Scholars have often compared Bhogi to the Indra Vizha celebrated by the Chola kings at Kaveripattinam, also known as Poompuhar. Indra Vizha was celebrated in honour of Lord Indra, also called Bhogi, the God of thunder and rain.

    The second day is Perum Pongal, the most important. It is also called Surya Pongal because people worship Surya, the Sun God and his consorts, Chaya and Samgnya. Women decorate the central courtyard of their homes with beautiful kolams, done with rice flour and bordered with red clay. The Pongal dish is cooked exactly at the moment when the new month is born.

    There are several legends associated with Perum Pongal. A sage named Hema prayed to Lord Vishnu on the banks of the Pottramarai tank in Kumbakonam. On Perum Pongal day, the lord is believed to have taken the form of Sarangapani and blessed the sage. Yet another legend has it that Lord Shiva performed a miracle where a stone image of an elephant ate a piece of sugarcane.

    The third day is Mattu Pongal, celebrated to glorify cattle that help farmers in a myriad ways. On this day, the cows are bathed and decorated with vermilion and garlands and fed. In certain villages in southern Tamil Nadu, a bullfight called manji-virattu is held in the evening. Bags of coins are tied to the sharpened horns of ferocious bulls that are let loose in an open ground. The young men of the village vie with each other to subdue the bull and grab the bags tied to the horns.

    In fact, in ancient Tamil literature, men had to subdue the bull in order to win the hand of a fair maiden and even Lord Krishna is believed to have defeated seven bulls before marrying Nappinnai. Unlike in the Spanish bullfights, in manji-virattu, the bull is never killed. Mattu Pongal has little significance to city folks. In most urban homes, the day is celebrated as Kannu Pongal. Special prayers are offered by women for the well-being of their brothers.

    The Tamils also remember the poet Tiruvalluvar, who was born on this. The last day is Kaanum Pongal. It is that part of the festival when families used to gather on the riverbanks and have a sumptuous meal (kootanchoru). It is also time for some traditional dances such as kummi and kolattam. In recent years, that day is celebrated as Uzhavar Tirunal in honor of farmers.

    Pongal Celebration

    People can clearly see the activities related to Pongal celebration, once the chill in the air heralds the festive occasion of Pongal. The festival is celebrated on January 15 th every year and is also one of the longest celebrations in the Tamil calendar, spread over four days. As part of age-old belief and in the hope that the month of `Thai' will usher in good fortunes, people go agog with joy.

    The festival of Pongal is held dear particularly by the farming community as it marks the end of harvesting season. The markets start receiving stacks of sugarcanes, turmeric saplings and a horde of farm produces. The run-up to Pongal is as exciting as celebrating the occasion that is believed to ring in prosperity.

    Pongal is also celebrated as a thanksgiving festival for various Hindu deities. The festivities begin with `Bhogi' and the first day is considered to be a prelude to the celebrations that follow. `Bhogi' is observed as a thanksgiving occasion to Lord `Indra', the God of Heavens. The next day is the `Pongal' day, which is celebrated to pay respects to `Surya', the Sun God. It is the day of a new beginning and makes people go for joyful celebrations. As a mark of respect to the cattle, the farmer's best friends, the third day of Pongal festival is celebrated as `Maattu Pongal'. `Kaanum Pongal' marks the end of the four-day celebrations.

    People generally go for sightseeing, shopping and exchanging pleasantries with relatives and friends. The farmers, during this point of time, are generally flushed with money having sold their produce. On all the four days during Pongal festival, people make it a point to visit temples and invoke the blessings of the God for a good and prosperous beginning to the year.

    In the midst of all the cheer and celebration, the cynosure of all eyes is the traditional sport of valour -- the `jallikattu' (bull-fight). The valor of the youth goes on test at the `jallikattu'. The objective of the sport is to wrest the bounty, which is put in a cloth and tied to the horns of the bulls. Unlike in Spain the matador here does not kill the bull. In the past, the valiant youth were chosen as grooms for village damsels. With all its unique features and many hued celebrations, Pongal brings lots of happiness and joy in the family.
