    Mini Mixed Vegetable Turnovers

    Ingredients:

    1 cup dosa batter

    1/2 cup grated mixed vegetables (carrots, cabbage, cauliflower, onions etc.)

    1 1/2 tbsp powdered roasted peanuts

    2 tbsp chopped coriander

    1 tsp sugar

    1 tsp chilli powder

    salt to taste

    2 tsp sesame seedsfor the topping

    2 tsp oil for cooking

    8 tsp tomato ketchup for serving



    Method:

    1. Combine together the dosa batter, vegetables, peanuts, coriander, sugar, chilli powder, salt and 2 tbsp water in a bowl and mix well. Keep aside.

    2. Heat a non-stick pan and grease it lightly with oil.

    3. Sprinkle ½ tsp of sesame seeds on it.

    4. When they crackle, pour a ladleful of the batter and spread it evenly to make a circle of 75 mm (3") diameter.

    5. Cook using ½ tsp of oil, till both sides are golden brown in colour.

    6. Repeat with the remaining batter to make 7 more turnovers.

    7. Serve hot with tomato ketchup.


    Tips:


    This would be better than the stuffed dosa as the vegetables would not spill on your kids' dress... Saves your washing effort...

    Carrot Rice

    Ingredients:

    Rice - 1 cup (uncooked) or 2 cups cooked rice

    Grated carrot - 1 cup (about 3 carrots)

    Onion - 1 (chopped)

    Green chilly - 2 (slited)

    Turmeric powder - 1/4 tsp

    Salt - as needed

    Oil - 1 tblsp

    Corriander leaves- for garnish



    For tempering

    Mustard seeds - 1/2 tsp

    Cumin seeds - 1/2 tsp

    Urad dal - 1 tsp

    Curry Leaves - 1 strand



    For Masala

    Coriander seeds - 1 tsp

    Dry red chillies - 3-4

    Peanuts - 1 tblsp

    Grated Coconut - 2 tsp


    Method


    1. Cook the rice seperately and keep it aside. Spread it on a tray to ensure that the grains don't stick to each other.


    2. Heat little oil (2 tsp) in a pan and splutter the ingredients under 'for tempering'.


    3. Add the chopped onions and green chilly and fry for 2-3 minutes.


    4. Add turmeric powder and the grated carrot and fry for another 2-3 minutes.


    5. Toss in the rice and required salt.
    (If you are in a hurry you could stop with this)


    6. Heat 1 tsp of oil in a small pan and fry the ingredients under 'for masala' until it turns nice and golden brown.


    7. Coarsely grind it and toss this powder along with the rice. This adds nice flavour and crunch to the rice.


    8. Garnish with ribbons of carrot and finely chopped coriander leaves and serve with some raita.


    Tips:

    You could also use channa dal and some cashew nuts for tempering

    You could also squeeze the juice of half a lime and a pinch of garam masala while tossing the rice

    Arisi Paruppu Sadam

    Ingredients

    Rice - 1 1/2 cups

    Tur dal - 1/2 cups

    Onions - 1, large, finely chopped

    Tomatoes - 2, medium size, finely chopped

    Green chilies - 2, slit

    Coriander leaves - 2 tbsps, finely chopped

    Tempering/Poppu/Tadka:

    Mustard seeds - 1/2 tsp

    Cumin seeds - 1/2 tsp

    Garlic - 2, cloves, crushed

    Red chilies - 2, tear and de-seed

    Cinnamon stick - 1"

    Cloves - 2

    Curry leaves - 1 sprig

    Oil - 1 tbsp

    Ghee - 1 tbsp (you can use oil)


    Method:


    1. Heat oil and ghee in a pressure cooker. Once the oil+ghee turns hot, add mustard seeds and allow to splutter. Add cumin seeds, crushed garlic, red chilies, cinnamon, cloves and curry leaves and saute for 15-20 secs on medium flame.

    2. Add chopped onions and green chilies and saute for 5 mins. Add turmeric powder and salt and mix well. Add chopped tomatoes and saute for 5 mins.

    3. Add the drained rice and dhal and saute for 2 mins. Add half of the chopped coriander leaves and mix well.

    4. Add 4 cups of water and place lid. Pressure cook upto 3 whistles and turn off flame. Once the pressure reduces, remove lid and mix well.

    5. Remove to a serving bowl, garnish with chopped coriander leaves and serve warm with papad and potato fry.



    Tips:

    Garlic can be omitted and 1/4 tsp of asafoetida can be used in its place during tempering process.

    A heaped tsp of sambar powder can be added at Step 3.

    A tsp of coriander powder can also be added.

    For a mushy rice, add 5 cups of water.

    Mixed vegetables like potato, peas, carrot, beans and beetroot can also be added after sauteing the onions and before adding the tomatoes.

    Popcorn Crusted Fish Fingers

    Many kids prefer chicken to fish... Let's try to make it tasty...


    Ingredients

    250 gms fish cut into fingers

    1 lemon, juice

    Sauce: 1 tsp tamarind paste, 1 tsp soy sauce, 1 tsp cider or white vinegar, dash hot pepper sauce, one pinch cloves

    Salt to taste

    Pepper to taste

    1 cup flour

    2 egg, white

    1/2 cup bread crumbs

    1/2 cup popcorn


    Method


    1. Marinate the fish with lemon juice, above mentioned sauce, salt and pepper.

    2. Roll in flour and dip in the egg white and finally in the popcorn, bread crumb mixture.

    3. Bake or deep fry in hot oil.

    Mixed Fruit Burfi

    A healthy and delicious sweet...


    Ingredients


    slightly overripe peaches - 2
    Plums - 3
    Khoya/mawa,grated - 2 cups
    Sugar - ¼ cup
    Mixed nuts,finely chopped - as reqd
    Green cardamom powder - ¼ tsp
    Ghee for greasing


    Method

    1. Peel peaches and chop them finely. Finely chop plums.

    2. Heat a non-stick pan, add khoya, sugar and green cardamom powder and cook till khoya melts and sugar dissolves.

    3. Grease a tray with ghee. Spread some of the nuts over it.

    4. When the khoya melts, add plums and peaches and mix till well blended.

    5. Spread this mixture in the tray over the nuts and sprinkle the remaining nuts over it.

    6. Place the tray in the refrigerator and allow it to set. When burfi sets, cut and serve.
