I would like to give you a healthy fried rice recipe using brown rice:

1 Cup brown rice (pre cooked and best if it is one day old)
2 tablespoons olive oil
1/2 cup cooked peas
1/2 cup cooked and chopped carrot
1 cup broccoli floret
3/4 cup sliced mushroom
1 egg beaten
Soy Sauce for taste
Heat 1 table spoon olive oil and saute sliced mushroom until browned
Remove from heat
Heat remaining oil in a pan and add rice
Add egg and mix thoroughly until rice is coated with egg
Cook for 5-10 minutes until the egg becomes slightly brown.
Combine rice mixture and vegetables in large bowl and stir well until vegetables get mixed well.
Add soy sauce to taste and serve.
