    Purple Cabbage - Purple Cabbage is a great store of
    vitamin C and vitamin K. The rich deep colour of this vegetable is due to a high concentration of anthocyanin polyphenols (strong dietary antioxidants, possessing anti-inflammatory properties), making it have even more phytonutrients than a green cabbage.

    A few studies also show that anthocyanins may help reduce the risk of heart disease,
    diabetes and certain types of cancer. It is rich in anti-oxidants which makes skin supple and clear.

    Dietary fiber in Purple Cabbage prevents excess cholesterol from entering your bloodstream through the wall of your small intestine; the fiber absorbs the cholesterol and excretes it through the waste elimination process.

    It also prevents heart muscle stress by supporting the contraction that fuels your heartbeat.

    The vitamin C content in purple cabbage is nutritionally significant. A 1-cup serving provides 51 mg, or 85 percent, of the 60-mg daily requirement. Cooking decomposes some of the nutrient. Raw purple cabbage contains a higher level of vitamin C than it does when cooked. Vitamin C is an effective antioxidant. It protects cells from the DNA and compositional destruction that metabolic toxins often cause.

    It is rich in Vitamin A. Vitamin A is a nutrient that provides a variety of functions in your body. It produces retina pigments for your eyes, maintains vision health and improves vision at night. It also supports your body's immune response, reducing your risk of microbial infection.

    Green Brinjal - Green Brinjal helps to fight and prevent various kinds of cancer. The fiber in brinjal decreases the risk of Colon Cancer by absorbing toxins and chemicals that cause Colon cancer.     White Beans - White beans are a protein-rich starchy vegetable, full of vitamins, minerals and an excellent source of dietary fiber. 1 cup serving of cooked kidney beans satisfies 45 percent of the Recommended Daily Value (DV) of dietary fiber. Once in your digestive system, soluble fiber binds itself with the bile acids and removes it out of your body. This prevents such bile acids from being reabsorbed in your liver and hence inhibits synthesis of harmful cholesterol.

    White beans are rich in antioxidants, which are known to have anticancer properties. When cells in your body metabolize, they produce compounds known as free radicals. Such compounds bind to your cells, causing aging, cancer and chronic diseases. Antioxidants destroy free radicals, countering their harmful effects.

    Fiber-rich diets help promote healthy cholesterol levels and lower cholesterol. White beans are also rich in a B vitamin known as folate. In fact, a 1 cup serving of cooked white beans meets over half of the Recommended Daily Value or DV for this nutrient. Folate helps lower levels of homocysteine. Homocysteine is an amino acid that acts as a toxin in the bloodstream. In fact, elevated levels of this amino acid in the bloodstream is an independent risk factor for stroke and heart attack.

    White beans are rich in vitamin B1, or thiamin, which is necessary for formation and operation of brain cells. Thiamin is a key component in the synthesis of acetylcholine, which ensures that your memory functions properly.

    Yellow Onions - Yellow onions have a mildly sweet flavor.Yellow Onions have no fat, sodium or cholesterol. One cup of raw onions has 2.7 g of dietary fiber, which is 11 percent of the recommended daily value, or DV, for fiber, based on a 2,000-calorie daily diet. Fiber provides important bulk and roughage for digestive health. The 1-cup serving also has 4.9 g of protein, which is important for cell growth.

    The vitamins in yellow onions include folate and vitamin B6, which are important for brain function. The vitamin C content in a cup of raw onions is 11.8 mg, or 20 percent of the DV. Dietary sources of vitamin C are important because the body does not store this key vitamin. Vitamin C is important for wound healing, strong bones and teeth, and strengthening blood vessels and the bonds between blood cells.

    Minerals in yellow onions include calcium, magnesium, iron and manganese. Magnesium is vital for your heart, nerves and muscles. One cup of raw onions has 46.4 mg of phosphorus and 234 mg of potassium. Phosphorus helps every cell in your body function properly and helps the body produce energy.
