    Tangerines

    As in oranges, Tangerines are very low (53 calories/100 g) in calories. Nevertheless, they are valuable sources of flavonoid anti-oxidants like naringenin, naringin, hesperetin, vitamin A, carotenes, xanthins and luteins; in fact, several times higher than in the oranges.

    In addition, the citrus fruits are very rich sources of vitamin-C (ascorbic acid), a water-soluble vitamin. Vitamin-C is one of the powerful natural anti-oxidant, which has many essential roles like collagen synthesis, wound healing, anti-viral, anti-cancer activity, and help prevent from neuro-degenerative diseases, arthritis, and cold/fever...etc., by removing oxidant-free radicals from the body. Vitamin C helps absorb iron in the food by reducing ferrous form of the iron elements to ferric form in the gut.

    Further, they contain natural soluble and insoluble fiber like hemi-cellulose, pectin...etc., which prevents cholesterol absorption in the gut. Adequate fiber in the food aids in smooth bowel movements by acting as a laxative.

    Citrus fruits, as such, have long been valued for their wholesome nutritious and antioxidant properties. It is scientifically established that citrus fruits, especially oranges, by virtue of their richness in vitamins and minerals, have many proven health benefits.

    Moreover, it is now beginning to be appreciated that the other biologically active, non-nutrient compounds found in citrus fruits such as phyto-chemical antioxidants; soluble and insoluble dietary fiber is helpful in reduction in the risk for cancers, many chronic diseases like arthritis, and from obesity and coronary heart diseases.

    Caraway Seeds

    Caraway seeds are rich source of dietary fiber. 100 g seeds provide 38 g of fiber. They increase bulk of the food and help prevent constipation by speeding up movement of food through the gut. In fact, gastro-intestinal transit time of food is greatly decreased.

    Fiber also binds to toxins in the food and helps protect the colon mucus membrane from cancers. In addition, dietary fibers bind to bile salts (produced from cholesterol) and decrease their re-absorption in colon, thus help lower serum LDL cholesterol levels.

    Caraway contains several health benefiting essential oils. Principle volatile compounds are carvone, limonene, carveol, pinen, cumuninic aldehyde, furfurol, and thujone. These active principles in the caraway seeds are known to have antioxidant, digestive, carminative, and anti-flatulent properties.

    Caraway has several health benefiting flavonoid antioxidnats such as lutein, carotene, crypto-xanthinand zea-xanthin. These compounds are indeed functions as powerful anti-oxidants by removing harmful free radicals from the body thus protect from cancers, infection, aging and degenerative neurological diseases.

    Caraway spice is an excellent source of minerals like iron, copper, calcium, potassium, manganese, selenium, zinc and magnesium.

    Eggplant

    Eggplant is very low in calories and fats but rich in soluble fiber content. 100 g provides just 24 calories but contributes about 9% of RDA (recommended daily allowance) of fiber.

    The peel or skin (deep blue/purple varieties) of aubergine has significant amounts of phenolic flavonoid phyto-chemicals called anthocyanins. Scientific studies have shown that these anti-oxidants have potential health effects against cancer, aging, inflammation, and neurological diseases.

    Total antioxidant strength measured in terms of oxygen radical absorbance capacity (ORAC) of aubergines is 993 mol TE/100 g. At value 15; they are one of the low glycemic index (GI) vegetables.

    It contains good amounts of many essential B-complex groups of vitamins such as pantothenic acid (vitamin B5), pyridoxine (vitamin B6) and thiamin (vitamin B1), niacin (B3). These vitamins are essential in the sense that body requires them from external sources to replenish and required for fat, protein and carbohydrate metabolism.

    Further, this vegetable is an also good source of minerals like manganese, copper, iron and potassium. Manganese is used as a co-factor for the antioxidant enzyme, superoxide dismutase. Potassium is an important intracellular electrolyte helps counter the hypertension effects of sodium.

    Allspice

    The active principles in the allspice found to have been anti-inflammatory, rubefacient (warming and soothing), carminative and anti-flatulent properties.

    Allspice contains health benefiting essential oils such as eugenol, a phenylpropanoids class of chemical compound, which gives pleasant, sweet aromatic fragrances to this spice. It also contains caryophyllene, methyleugenol, glycosides, tannins, quercetin, resin, and sesquiterpenes. At the processing units, these volatile essential oils are obtained through distillation process using this spice corn. The outer coat of the allspice-berries is believed to have the greatest concentration of some of the compounds of medicinal activities.

    As in black peppercorns, the active principles in the allspice may increase the motility of the gastro-intestinal tract as well as augment the digestion power by increasing enzyme secretions inside the stomach and intestines.

    Eugenol, has local anesthetic and antiseptic properties, hence; useful in gum and dental treatment procedures. Recent research studies have shown that preparation made from allspice oil mixed with extractions from garlic and Oregano can work against E.coli, Salmonella and L.monocytogenes infections.

    The spice is enriched with the good amount of minerals like potassium, manganese, iron, copper,selenium, and magnesium.

    Further, the spice also contains very good amounts of vitamin A, vitamin B-6 (pyridoxine), riboflavin,niacin and vitamin-C. Vitamin C is a powerful natural antioxidant; regular consumption of foods rich in vitamin C helps the body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals.

    Black currants have significantly high amounts of phenolic flavonoid phytochemicals called anthocyanins. Scientific studies have shown that consumption of blackcurrants have potential health effects against cancer, aging, inflammation, and neurological diseases.

    Black currants have anti-oxidant value (Oxygen radical absorbance capacity- ORAC) of 7950 Trolex Equivalents per 100g, which is one of the highest value for fruits after Chokeberries, elderberry, and Cranberries. Red currants, however, possess comparatively less ORAC value at 3387 TE than the black variety.

    Burdock Root

    Burdock roots, young shoots, peeled stalks, and dried seeds contain numerous compounds that are known to have been anti-oxidant, disease preventing, and health promoting properties.

    The root is very low in calories; provide about 72 calories per 100 g. Burdock is a good source of non-starch polysaccharides such as inulin, glucoside-lappin, mucilage, etc., that help act as a laxative. Additionally, inulin acts as prebiotic and helps reduce blood-sugar level, weight and cholesterol levels in the blood.

    Canola Oil

    Canola oil is rich in energy; 100 g of oil provides 884 calories. However, its high ratio of mono-unsaturated fatty acids to saturated fatty acids makes it one of the healthy oil for consumption.

    Like Olive Oil, it is very low in saturated fats. It contains linoleic (omega-6) and α-linolenic acid (omega-3) essential fatty acids at 2:1 making it as one of the healthiest cooking oils at a ratio even better than olive oil.

    It has highest levels of plant sterols, especially β-sitosterol and campesterols.

    Canola oil is high in calories. However, its high-calorie content comes from better fats.

    It is especially rich in mono-unsaturated fatty acids (MUFA) like oleic acid (18:1) which constitutes about 61% of total fats that help to lower LDL or "bad cholesterol" and increase HDL or "good cholesterol" in the blood. Research studies suggest that Mediterranean diet that is very rich in monounsaturated fatty acids help to prevent coronary artery disease and strokes by favoring healthy blood lipid profile.

    The oil contains valuable amounts of anti-oxidant vitamin E, particularly gamma-tocopherol. 100 g fresh oil has 27.34 g of α-tocopherol and 17.46 g of α-tocopherol. Vitamin E is a powerful lipid soluble antioxidant, required for maintaining the integrity of cell membrane of mucus membranes and skin by protecting it from harmful oxygen-free radicals.
