As in oranges, Tangerines are very low (53 calories/100 g) in calories. Nevertheless, they are valuable sources of flavonoid anti-oxidants like naringenin, naringin, hesperetin, vitamin A, carotenes, xanthins and luteins; in fact, several times higher than in the oranges.
In addition, the citrus fruits are very rich sources of vitamin-C (ascorbic acid), a water-soluble vitamin. Vitamin-C is one of the powerful natural anti-oxidant, which has many essential roles like collagen synthesis, wound healing, anti-viral, anti-cancer activity, and help prevent from neuro-degenerative diseases, arthritis, and cold/fever...etc., by removing oxidant-free radicals from the body. Caraway seeds are rich source of dietary fiber. 100 g seeds provide 38 g of fiber. They increase bulk of the food and help prevent constipation by speeding up movement of food through the gut. In fact, gastro-intestinal transit time of food is greatly decreased.
Fiber also binds to toxins in the food and helps protect the colon mucus membrane from cancers. In addition, dietary fibers bind to bile salts (produced from cholesterol) and decrease their re-absorption in colon, thus help lower serum LDL cholesterol levels.

The peel or skin (deep blue/purple varieties) of aubergine has significant amounts of phenolic flavonoid phyto-chemicals called anthocyanins. Scientific studies have shown that these anti-oxidants have potential health effects against cancer, aging, inflammation, and neurological diseases.
Total antioxidant strength measured in terms of oxygen radical absorbance capacity (ORAC) of aubergines is 993 µmol TE/100 g. At value 15; they are one of the low glycemic index (GI) vegetables.

Burdock roots, young shoots, peeled stalks, and dried seeds contain numerous compounds that are known to have been anti-oxidant, disease preventing, and health promoting properties.

Canola oil is rich in energy; 100 g of oil provides 884 calories. However, its high ratio of mono-unsaturated fatty acids to saturated fatty acids makes it one of the healthy oil for consumption.
Like Olive Oil, it is very low in saturated fats. It contains linoleic (omega-6) and α-linolenic acid (omega-3) essential fatty acids at 2:1 making it as one of the healthiest cooking oils at a ratio even better than olive oil.
It has highest levels of plant sterols, especially β-sitosterol and campesterols.
Canola oil is high in calories. However, its high-calorie content comes from better fats.
It is especially rich in mono-unsaturated fatty acids (MUFA) like oleic acid (18:1) which constitutes about 61% of total fats that help to lower LDL or "bad cholesterol" and increase HDL or "good cholesterol" in the blood. Research studies suggest that Mediterranean diet that is very rich in monounsaturated fatty acids help to prevent coronary artery disease and strokes by favoring healthy blood lipid profile.
