    Fiddlehead Ferns - Fiddlehead ferns are unique in their appearance, taste, and nutrition profile. The curly young shoots contain only 34 calories per 100 g. Nonetheless; their high-quality plant-nutrition profile consists of health benefiting antioxidants, vitamins, and omega-3 and omega-6 essential fatty acids.

    Fresh fronds are very high in antioxidant vitamin-A, and carotenes. 100 g of fiddleheads contain 3617 IU of or 120% of recommended daily requirements of vitamin A. Vitamin A is a powerful natural anti-oxidant and is required by the body for maintaining the integrity of skin and mucus membranes. It is also an essential vitamin for vision. Research studies suggest that natural foods rich in vitamin A help the body protects against lung and oral cavity cancers.

    They are an excellent source of many natural poly-phenolic flavonoid compounds such as α and -carotenes. Carotenes convert to vitamin A inside the body.

    Their unique sweet taste comes from their richness in vitamin C. 100 g of fresh fronds contains 26.6 mg or 44% of daily-required levels. Vitamin C is a moderately potential water soluble anti-oxidant. Together with flavonoid compound like carotenes, it helps scavenge harmful free radicals, and offer protection from cancers, inflammation, and viral cough and cold.

    Fern shoots are a very good source of minerals and electrolytes, especially potassium, iron, manganese and copper. 100 g of fresh shoots contains 370 mg or 7% of daily-required levels of potassium. Potassium is a heart friendly electrolyte, which helps reduces blood pressure and heart rate by countering sodium effects.

    Further, they contain small to moderate levels of some of the valuable B-complex group of vitamins such as niacin, riboflavin, and thiamin.

    Poblano Pepper - One cooked poblano pepper has 13 calories. A poblano pepper has well under a half gram of fat, and only a small fraction of that is saturated fat. Poblano peppers do not have cholesterol. Extremely low-calorie foods, such as poblano peppers, make healthy snacks to maintain a low-calorie diet.

    Cooked poblano peppers are low in carbohydrates. One poblano pepper contains 2.7 grams of carbohydrates, which is only 1 percent of the total daily value. Out of the 2.7 grams of carbohydrates, 1.1 gram is dietary fiber. This represents 4 percent of the recommended daily allowance of fiber. This fiber has a number of health benefits, including regulating bowel movements, controlling blood sugar levels, reducing cholesterol and possibly aiding in weight loss.


    All peppers are high in vitamin C, a crucial antioxidant that may protect you against a number of diseases. The amount of vitamin C in each pepper varies and some of the antioxidant will be lost when cooking. Generally, a raw poblano pepper has 95 percent of the daily recommended value of vitamin C. The exact amount of vitamin C lost during cooking is unknown and depends on the method of cooking. However, poblano peppers will retain some of their vitamin C despite how they are cooked.


    Potassium is an essential mineral known as an electrolyte that is necessary for digestion and the proper functioning of the kidneys, heart and muscles. Potassium is also one of the most soluble minerals, so some of the potassium is lost during cooking, especially if boiling the peppers. Steaming, roasting or cooking the poblano pepper in the microwave will help to prevent too much potassium loss because these cooking methods do not involve soaking the peppers in water like boiling does. One raw poblano pepper has approximately 113.28 mg of potassium.

    Raisin Bran - A serving of Kellogg's raisin bran contains 6.5 g of fiber and a serving of General Mills Total raisin bran has 4.8 g. Women should aim to get 21 to 25 g of fiber each day while men need 30 to 38 g daily. Adequate fiber intake is associated with healthy digestion by helping to regulate bowel function and it can be used to treat symptoms of diverticulitis and constipation.

    Fiber also helps to keep cholesterol levels within the normal range. Fiber offers appetite control because it digests slowly, keeping you feeling full for longer.

    Folate, or folic acid, is a B vitamin that is especially important to women in their childbearing years because it prevents neural tube birth defects. It also plays a role in cell and DNA development.

    A cup of Kellogg's Raisin Bran has 150 mcg of folate and 1 cup of General Mills Raisin Bran contains 385 mcg. The daily intake recommendations are 400 mcg, unless you are pregnant and then this number increases to 600 mcg.

    Grain foods are a good source of niacin and women should aim to get 14 mg each day while men need 16 mg each day. A cup of Kellogg's Raisin Bran contains 8.6 mg and 1 cup of General Mills Raisin Bran contains 19.2 mg. Niacin, also called vitamin B-3, plays a role in converting your food into the energy your body needs to get through daily tasks.

    It also supports a healthy nervous system, makes hormones, improves circulation and helps to reduce cholesterol. A deficiency could result in skin problems, fatigue, diarrhea, depression and dementia.
