Lemon Cucumber - It is one of the very low calorie vegetables; provide just 15 calories per 100 g. It contains no saturated fats or cholesterol. Cucumber peel is a good source of dietary fiber that helps reduce constipation, and offer some protection against colon cancers by eliminating toxic compounds from the gut.

It is a very good source of potassium, an important intracellular electrolyte. 100 g of cucumber provides 147 mg of potassium but only 2 mg of sodium. Potassium is a heart friendly electrolyte helps bring a reduction in total blood pressure and heart rates by countering effects of sodium.

Lemon Cucumbers contains unique anti-oxidants in moderate ratios such as β-carotene and α-carotene, vitamin-C, vitamin-A, zea-xanthin and lutein. These compounds help act as protective scavengers against oxygen-derived free radicals and reactive oxygen species (ROS) that play a role in aging and various disease processes. Their total antioxidant strength, measured in terms of oxygen radical absorbance capacity (ORAC value), is 214 mol TE/100 g.

Lemon Cucumbers have mild diuretic property, which perhaps attributed to their free-water, and potassium and low sodium content. This helps in checking weight gain and high blood pressure.

They surprisingly have a high amount of vitamin K, provides about 17 g of this vitamin per 100 g. Vitamin-K has been found to have a potential role in bone strength by promoting osteotrophic (bone mass building) activity. It also has established role in the treatment of Alzheimer's disease patients by limiting neuronal damage in their brain.

Yellow apples reduce the risk of neurodegenerative diseases such as Parkinsonism and Alzheimer’s.

The antioxidants in it protect the nerve cells caused by oxidative stress which ultimately prevents neurodegenerative diseases.

Orange Peels - Orange peels contain a lot of dietary fiber. 100 grams of orange peels contain at least 10.6 grams of dietary fiber. Dietary fiber is useful for preventing irritable bowel syndrome including constipation and bloating. You can prepare a relaxing tea with orange peel extract to soothe your digestive system.

Almost all the anti-cholesterol compounds in oranges are found in the peels. These compounds help combat the LDL or ‘bad’ cholesterol in our bodies that form clots and plaque culminating in clogged heart arteries. Therefore, including orange peels to your diet can lower the total cholesterol levels in the body.

Apart from repelling oxygen free radicals that steal oxygen from healthy cells, the chemical compounds in orange peels also help inhibit the growth and division of cancerous cells.

Suffer from chronic heartburn?? There’s a natural relief to get rid of severe heartburns- orange peels! Research shows that an active chemical in orange peels helps relieve heartburn. When used over a period of 20 days, you can get a extended relief from heartburns.

Orange peels are bursting with vitamin C that is a great immune booster. The anti-oxidants in oranges especially vitamin C may help avert numerous respiratory problems such as bronchitis, colds, flu, asthma, and lung cancer.

Vitamin c in oranges is very beneficial as a natural skin bleacher. Orange peel extract when applied to skin can lighten and cover up dark blemishes and spots. Orange peels are safe to use on skin. Just be sure to rub the peel lightly on your skin and also use diluted orange peel pastes to prevent burns. Besides skin whitening, orange peel extract also helps tone the skin, naturally cleanse pores and shield the skin from harmful UV rays.

Black Radish - They are are one of very low calorie root vegetables. Fresh root provides just 16 calories per 100 g., nonetheless; they are a very good source of anti-oxidants, electrolytes, minerals, vitamins and dietary fiber.

Radish, like other cruciferous and Brassica family vegetables, contains isothiocyanate anti-oxidant compound called sulforaphane. Studies suggest that sulforaphane has proven role against prostate, breast, colon and ovarian cancers by virtue of its cancer-cell growth inhibition, and cyto-toxic effects on cancer cells.

Fresh roots are rich in vitamin C; provide about 15 mg or 25% of DRI of vitamin C per 100 g. Vitamin C is a powerful water soluble anti-oxidant required by the body for synthesis of collagen. Vitamin C helps the body scavenge harmful free radicals, prevention from cancers, inflammation and help boost immunity.

In addition, they contain adequate levels of folates, vitamin B-6, riboflavin, thiamin and minerals such as iron, magnesium, copper and calcium.

Further, they contain many phytochemicals like indoles which are detoxifying agents and zea-xanthin, lutein and beta carotene, which are flavonoid antioxidants. Their total antioxidant strength, measured in terms of oxygen radical absorbance capacity (ORAC value), is 1736 mol TE/100 g.

Mustard Greens - The greens are supposed to be one of the highest among leafy vegetables, which provide vitamin K.100 g of fresh leaves contains about 497 g or about 500% of daily requirement of vitamin K-1 (phylloquinone). Vitamin K has found to have a potential role in bone mass building function by promoting osteo-trophic activity in the bone. It also has established role in Alzheimer's disease patients by limiting neuronal damage in the brain.

Fresh leaves are also a very good source of folic acid. 100 g provide about 187 g (about 47% of RDA) of folic acid. This water-soluble vitamin has an important role in DNA synthesis and when given before, and early pregnancy may help prevent neural tube defects in the newborn baby.

Mustard greens are rich source of anti-oxidants flavonoids, indoles, sulforaphane, carotenes, lutein and zea-xanthin. Indoles, mainly di-indolyl-methane (DIM) and sulforaphane have proven benefits against prostate, breast, colon and ovarian cancers by virtue of their cancer-cell growth inhibition, cytotoxic effects on cancer cells.

Fresh mustard leaves are an excellent source of vitamin-C. Provides 70 g or about 117% of RDA per 100 g. Vitamin-C (ascorbic acid) is a powerful natural anti-oxidant that offers protection against free radical injury and flu-like viral infections.

Mustard leaves are also incredible sources of vitamin-A (provide 10500 IU or 350% of RDA per 100 g). Vitamin A is an essential nutrient for maintaining healthy mucus membranes and skin and is required for good eye-sight. Consumption of natural fruits rich in flavonoids helps to protect from lung and oral cavity cancers.

Regular consumption of mustard greens in the diet is known to prevent arthritis, osteoporosis, iron deficiency anemia and believed to protect from cardiovascular diseases, asthma and colon and prostate cancers.
