    Thank you friends!

    Gorget to add the recipes preparation method. Here is the preparation method for rava laddu, athirasam and thattai.

    Rava Laddu

    Ingredients:

    Rava or sooji (semolina) - 2 cups
    Sugar - 1 1/2 gms
    Ghee - 100 gms
    Cardamom powder - a pinch
    Fried Cashewnut & Dry Grapes - Few
    Milk - 25 ml

    Method:
    • Roast rava till it changes to a light brown colour. Take off from the stove. Once it gets cool, coarsely powder the rava.
    • Likewise powder sugar too.
    • Now put the grounded rava, sugar, cardamom powder, ghee, milk, fried cashenuts and dry grapes in a vessel.
    • Mix all the ingredients well, and start making laddoos by taking the laddoo mixture and pressing within your palm.


    Note:
    Since milk is added, the laddu should be consumed within 3 days. You can also less the quantity of milk if you are going to store it for long.

    Athirasam
    Ingredients:
    Raw Rice - 4 Cups
    Grated jaggery - 2 cup
    Cardamom powder - a pinch
    Half cup water
    Oil for deep fry

    Method:
    • Wash and then soak 4 cups of rice for 5 hours. Now drain the water and spread it on a clean cotton cloth. Allow it to dry for 30 mins.
    • Grind to fine powder in a mixie and sieve the powder.


    Jaggery Syrup:
    • In a thick bottomed vessel, pour half a cup of water and grated jaggery to it.
    • When the jaggery melts, filter the syrup in a strainer to remove the dusts.
    • Now put it in flame again to make a thick syrup.
    • To check the syrup's consistency. Take a cup of water in a bowl. Put a drop of jaggery syrup into the water. The syrup will just settle at the bottom it won't get melted (i.e dissolves) in water.


    Dough Preparation:
    • Now add the rice powder to the jaggery syrup and stir it to form dough. Allow it to cool atleast for an hour.
    • Now make a lemon sized balls with the dough.
    • Apply some oil on the ball and make thick round flats with your fingers.
    • Heat oil in pan and deep fry in a medium flame until golden brown.
    • Remove it from the oil and between two ladles and press it to remove excess oil.
    • Let it gets cool and store it in a air tight container.


    Thattai Recipe:
    Rice - 4 cups
    Gram dhall - 1 cup (pottu kadalai)
    Chilli - 8 nos
    Salt - to taste
    Roasted Groundnut - 1 cup
    Channa dhall - 2 tsp
    Garlic - 2
    Curry leaves - 2 sprig

    Dough Preparation:
    • Soak 4 cups of rice (idli rice) for 3 hours in water.
    • Grind soaked rice in grinder as you grind for idli batter with salt.
    • Soak channa dhal for 4 hours.
    • Now fine powder the chillies and gram dhall.
    • Now coarsely ground the roasted groundnuts.
    • Crush the garlic in to fine.
    • Now mix the soaked channa dhal, grounded gram dhall powder, groundnuts, garlic and curry leaves in to the batter, The dough will be similar to chappathi dough, if it is watery add some gram dhal powder. so that it won't consume much water.
    • Make the doughs in to small lemon sized balls.
    • Thattai by hand Take a plastic cover oil it well and make the dough into evenly flattened with your fingers.
    • Thattai by machine - To make the work easier, use chapati maker / press machine. Place the plastic cover on both sides of the machine. Now place the rounded dough and press the machine gently to make it flat. Don't press too much else the flattened dough may get teared.
    • Heat oil in a pan and fry the flattened dough in the oil in a medium flame, till it turns to golden colour.


    Universal Rule Never Change!
