A delocious , healthy Diabetic chapathi with falafel


For The Bag chapathi
1 cup whole wheat flour
1 tsp (5 grams) dry yeast dissolved in water
1/2 tsp fruit sugar or Diabetic sugar
1/2 tsp salt

For The Dressing
6 tbsp low fat curds
2 cloves of garlic
2 spring onions , chopped
salt to taste

For The Patties
1 cup soaked white chick peas
1 slit green chilli , chopped
1/2 cup mint leaves (phudina) , chopped
1/2 tsp grated garlic
1/2 cup grated cabbage
1 cup grated carrot
1/4 cup finely chopped capsicum
1/2 tsp roasted cumin seeds (jeera) powder
salt to taste
1 tsp oil for brushing

Other Ingredients
2 tomatoes , thinly sliced
1 cup lettuce , shredded

For the bag chapathi

Combine all the ingredients in a bowl and using enough water, knead into dough until it is smooth and elastic
Cover the dough with a wet muslin cloth and allow it to prove till it doubles in volume (approx. 15 to 20 minutes).
Press the dough lightly to remove the air.
Divide the dough into 6 equal parts.
Roll out each portion into a circle of 150 mm. diameter and 4 mm. thickness.
Cook one circle on a hot tava on each side for a minute or until the bread puffs up.
Remove and keep aside. Repeat it for the remaining circles
Cut each chapathi in one corner and open it as bag Keep aside.

For the dressing

Blend all the ingredients in a liquidiser into a smooth sauce. Keep refrigerated.

For the patties

Drain the water from the white chick peas
Grind the chick peas , green chilli and mint in a blender to a coarse paste without using water.
Add the remaining ingredients and mix well.
Divide the mixture into 12 equal parts and shape them into patties.
Brush a non-stick pan with the oil and cook the patties till golden brown in colour.
Drain on absorbent paper and keep aside.

Further process

Warm the bag chapathi on a hot tava .
Fill each bag with some tomato slices and shredded lettuce, patties and a spoonful of the dressing on top.
Repeat for the remaining chapathi bags the same way
Serve immediately.
