    Diabetic Puranpoli (Diabetic Recipe)!!

    An occasional Sunday lunch, made diabetic-friendly by using sugar substitute and minimal ghee.

    Ingredients

    For the dough For the filling
    1 1/2 cups whole wheat flour
    1 cup chana dal (split Bengal gram)
    4 tbsp low fat milk
    3 tsp (approx.) sugar substitute
    Otheringredients For serving
    whole wheat flour for rolling
    1 1/2 tsp ghee for cooking

    Directions

    For the dough


    • Make soft dough using the flour, milk and a little water (if required). Knead it well.
    • Divide the dough into 8 equal portions and set aside.



    For the filling


    • Clean, wash and soak chana dal for 1 hour.
    • Drain the soaked chana dal, add ½ cup of water and cook it in a pressure cooker for 2 to 3 whistles.
    • Lightly mash the dal, add the sugar substitute and mix well. Cool completely and keep aside.

    How to proceed

    • Roll out one portion of the dough into a circle of 75 mm (3") diameter using a little flour.
    • Place a portion of the filling in the centre of the circle.
    • Bring together all the sides in the centre and seal tightly.
    • Roll out again into a circle of 75 mm (3") diameter using a little flour.
    • Cook on a non-stick pan until both sides are brown.
    • Repeat with the remaining dough and filling to make 7 more puranpolis.

    Nutritive values per puranpoli :

    • Calcium: 57.7 mg.
    • Carbohydrates: 34.9 gm
    • Energy: 198 cal
    • Fat: 2.2 gm
    • Fibre: 0.9 gm
    • Potassium: 386.8 mg
    • Protein: 9.6 gm
    • Zinc: 0.8 mg
