The heat is on and with things steaming up, food will play an important role in trying to cool you down.
And there's nothing like a chilled bowl of soup to do so. That's right! With ingredients like shrimp and leek, to pea and beetroot, cold soups can drive away the rigours of a hot summer day!

Chilled Beetroot Soup

Ingredients
Soured cream - 200 ml
Lemon juice - 2 tbsp
Onion - 1/2 small, red
Unsalted butter - a knob
Boiled beetroot - 80 g
Cinnamon - for flavour
Ice - crushed, a little

Method
- Saute the onion in a pan in a little butter.
- Put the soured cream, lemon juice, onion and beetroot into a blender and puree this well.
- Now add ice or cold water to the mix. Sprinkle a little cinnamon on this. Adjust the seasoning. Chill and serve with the soured cream on top. Can also serve with crusty bread.
