A quick cauliflower side dish for a lunch box can be make as quickly as 15 minutes if you have all ingredients ready the previous day. It stays well through the day and children simply love this combination.

Ingredients:
4 cups of cauliflower florets
1/2 cup freshly pureed tomato
1/2 teaspoon grated ginger
1/2 teaspoon cumin seeds
1 teaspoon turmeric powder
1 1/2 teaspoon garam masala powder
Salt to taste
1 teaspoon Oil
1 small bunch of coriander leaves roughly chopped
Method
Heat the oil in the heavy bottomed thava or pan
Add ginger, cumin seeds and saute them for a few seconds
Add the tomato, turmeric powder, garam masala powder and salt. Stir until all combined for a minute.
Finally add cauliflower florets and stir. Add about 2 tablespoons of water, cover the pan, turn the heat to low and simmer for 10 to 15 minutes stirring occasionally until cooked.

The cauliflower will be soft, yet firm and delicious to taste. finally stir in the coriander leaves and turn off the heat.
