If you notice Most Children like eating only the center part in a slice of bread. The crust normally goes into the bin.

You might not know but the crust has 8 times more cancer fighting antitoxins than the center of the same slice of a bread.

So try and ensure that your children don't make a habit of ignoring the crust.

Good info Kar!

I like the crust actually..thats a bit crispy and hard which i prefer. But technically could not understand the difference in content of carcinogenic fighting antitoxins in the crust and the middle part..may be due to exposure on baking..or something else.

An antioxidant Pronyl-lysine(known for increasing cancer-preventing enzymes) is created during the "baking of bread",, when starch and sugar react with the amino acid L-lysine. It has found that pronyl-lysine is eight times more plentiful in bread crust compared with the inside of the bread and with bread flour..

In addition,, It has found that bread crust is rich in fiber, which helps prevent colon cancer..
